Each cooker is equipped with 1 7/8" ball hitch. Heat and smoke travel from the firebox through pipes located in the cooking chamber. No smoke or fire goes directly into the cooking chamber. The heat and smoke go into the pipes inserted in the lower part of the cookers and circulates in the cooking chamber traveling under and over the food racks, like heat in an oven. This means that no carcinogens get on the food and no turning of the meat is needed. Smoke Flavor can be obtained by adding desired wood chips/chunks in specially designed "smoking box".
